Three Brothers Pork Sausage

The Rasberrys found that their recipe for making German sausage was becoming quite popular and realized that they had an opportunity to turn something they love – cold smoked sausage – into something profitable. After some talk and consideration, they decided to take their business idea to the next level and began seeking financing. Their lender was receptive their business idea and referred them to the Angelo State University – Small Business Development Center. They were assigned to business advisor James Leavelle.

Candi Rasberry and her son Brian worked with James developing their business plan for the loan they received that allowed them to build their production plant and purchase the food trailer where they will sell their sausage. While working with James, they learned about the health inspections and food safety in regards to their industry. Brian worked closely with James in developing their Hazard Analysis and Critical Control Point(HACCP) plan. Brian even took it upon himself to become certified in HACCP. After a few months of working on their business plan and HACCP plan, the Raspberry were able to realize their dream of making and selling cold smoked German Sausage. Of the assistance they received, the Brian Rasberry said, “If it wasn’t for James Leavelle, and the SBDC, drei Brüders would have struggled getting into business. It is remarkable how much I have learned about owning and operating a business with the help of James.”
