Food Safety and Product Development Laboratory (The Meat Lab)
The new facility was completed in April 2005. The facility is approximately 8,000 sq. ft. and includes an elevated classroom with multimedia capabilities, retail sales room, test kitchen, sensory panel rooms, smokehouse, fabrication room, coolers and freezers, and a harvest floor. The retail store is open every Friday during the long semesters (excluding the Friday after Thanksgiving) from noon to 5:30 p.m. and walk-ins are welcome.
