Audacity

Audacity is free, open source software for recording and editing sounds. It is available for Mac OS X, Microsoft Windows, GNU/Linux, and other operating systems. Audacity can be used to record live audio, convert tapes and records into digital recordings or CDs, edit Ogg Vorbis, MP3, and WAV sound files, cut, copy, splice, and mix sounds together, and change the speed or pitch of a recording.

Audacity is a free download from http://audacity.sourceforge.net/

In order to create MP3 files with Audacity, you will need to install the LAME encoder.
You can download the LAME encoder here: lame-3.96.1.zip
