Custom Processing

Processed Meats

The Meat Market is available for custom processing. While we always try to honor customer requests, advance scheduling of at least one week is necessary.

The Meat Market is a federally inspected facility and adheres to USDA-FSIS regulations and guidelines for food safety and security. We will only accept custom processing requests from approved, federally inspected facilities. All products must be approved by the Meat Market prior to processing and must bear the mark of inspection. Please see below for pricing and instructions.

  • Flat Fees for Services
    • Beef – $35
    • Pork –  $20
    • Lamb and Goat – $15
  • Processing Fees
    • Base – $0.60/lb
    • Smokehouse Fee – $50/run

A base processing fee has been established for simple fabrication and packaging. Additional processing, ingredients or processing techniques desired will increase the processing fee. The processing fee must be agreed on before services are rendered.
