Las Palomas Café is a dream come true after 13 years of hardworking in the food industry. It all started when Blanca Arredondo decided to start her own business and La Unica Tortilleria was founded in 2003 with the assistance of Dave Erickson Business Advisor and Director of the SBDC. After a few years of managing
La Unica Tortilleria they decided to take a new step, in which they purchased a mobile unit. They started serving breakfast burritos as Las Palomas. Advisor Havins had the opportunity to meet the Arredondos’ during one of her monthly trips to Mertzon. Throughout her many visits, she was able to assist the clients with the bookkeeping of their past ventures, and also assist them with the new venture of purchasing an existing building to open a full-service restaurant. The adventure took around six months and the client opened Las Palomas Café in June 2015.

Las Palomas Café now serves breakfast and lunch every day, as well as, dinner three times a week. The Mexican burrito style breakfast continues to be very popular, however, Las Palomas Café has now added American food to the menu for lunch and dinner.
Ms. Arredondo looks forward to continuing to grow and expand her business. Her future plans are to provide an outside/green house space for dining. Advisor Adriana Havins continues to work closely with Ms. Arredondo in the development of her business.
The new restaurant commenced with an owner’s investment and a commercial loan. They were able to retain three jobs and create an additional two.
