Audacity is free open source software for recording and editing sounds. It is available for Mac OS X, Microsoft Windows, GNU/Linux and other operating systems. Audacity can be used to record live audio; convert tapes and records into digital recordings or CDs; edit Ogg Vorbis, MP3 and WAV sound files; cut, copy, splice and mix sounds together; and change the speed or pitch of a recording.

Download Audacity for free at http://audacity.sourceforge.net/.
To create MP3 files with Audacity, install the LAME encoder that can be downloaded at lame-3.96.1.zip.
